Coconut Vegetable Chicken Bowl with Naan – 30% B6

Description:

EASY TO MAKE. Add Naan bread for a 30% RDA per serving meal.

Primary Ingredient: Vegetables

Ingredients:

4 c. Veggie broth
1 c. Each mushrooms, carrots, green onions, red pepper chopped
10 oz chicken breast cubed
2 T. Each Cilantro leaves and Red Curry Paste
1 t. Cumin, garlic powder, pepper
Salt to taste
14 oz. Can coconut milk
2 c. Rice Noodles
8 Rounds Naan Bread

Instructions:

Makes 8 servings. May freeze. Serve with Naan bread. Serving equals 1 1/2 cup.

Simmer broth with spices. Slice and/or dice chicken, mushrooms, carrots, red pepper. and onions. Add to broth. (May use shredded carrots) Simmer 15 minutes. Add coconut milk and peapods. Simmer 5 minutes. Remove from heat and add Rice Noodles and stir. Let sit five minutes or until noodles are soft. Spoon serving into boowl.Chop onion green tops and serve on top.

Homesteader Cornbread

Description:

Cornbread recipes to bake in 9″ by 13″ pan or in a 24 muffin pan(or 2 12). If baking in a muffin pan, see alternate baking time.

Primary Ingredient: Cornmeal

Ingredients:

1 ½ cups cornmeal (180g)
2 ½ cups milk(610ml)
2 cups all-purpose flour(250g)
1 tablespoon baking powder(13.8g)
1 teaspoon salt(6.1g)
⅔ cup white sugar(132g)
2 large eggs
½ cup vegetable oil(109ml)

Instructions:

Preheat oven to 400 degrees F (200 degrees C). In a small bowl, combine cornmeal and milk; let stand for 5 minutes. Grease a 9×13 inch baking pan.

In a large bowl, whisk together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs and oil until smooth. Pour batter into prepared pan.

Bake in preheated oven for 30 to 35 minutes, or until a knife inserted into the center of the cornbread comes out clean. In muffin tins, stick a small fork in one of the muffins to see if clean.

Prep Time: 10 to 15 minutes

Cook Time: 30-35 minutes in 9 by 13 pan or 15-20 minutes in muffin pans

No Yeast Dinner Rolls

Description:

Hearty Dinner Rolls made with no yeast. Good for 2 Turkey or Chicken Lunch small sandwiches.

Primary Ingredient: White Flour

Ingredients:

2 tbsp vegetable oil.(27.3 ml)
1/2 cup + 3 tbsp milk(167.7ml)
1/2 tbsp sugar(6.3 g)
1/2 tsp salt(3.0g)
2 tsp baking powder(9.2 g)
2 cups all-purpose flour(250g)

Instructions:

Preheat oven to 350F or 175C.

Line a baking sheet with parchment paper or silicone baking mat.
Add all ingredients except flour into a large mixing bowl and whisk. Add in flour gradually and stir in until a dough forms. Be careful not to add all the flour because you should have a little leftover.

Divide dough into 7 pieces and roll into balls. Place onto baking sheet, spaced 2 inches apart. If desired, you can brush the tops with vegetable oil before baking or you can leave them plain as is and brush them with melted butter after they are finished baking.

Bake rolls for about 25 minutes or until tops are golden brown.

Cook Time: 25-30 minutes

Zucchini pizza

Description:

Cuisine: American

Dish Type: Main

Primary Ingredient: Zucchini

Ingredients:

• 2 medium/large zucchini
• 1 cup mozzarella cheese shredded
• 2 large eggs 🥚
• 2 tbsp. coconut flour ( or almond )
• ½ tsp. garlic powder
• 1 tsp. oregano 🌿
• 1/4 tsp. basil

Instructions:

1. Rinse/shred/salt zucchini and in a colander
2. Toss and let it to sit about 15-20 minutes to release water. Preheat over to 400 degrees
3. Squeeze excess water out of grated zucchini kitchen towel or paper towels and place in medium mixing bowl.
4. Add mozzarella cheese, eggs, coconut or almond flour and seasonings. Combine well.
5. Place on parchment lined pan/pizza stone.
6. Spread into circular shape and bake in the oven 15 minutes or until golden brown.
7. Allow to cool completely before topping and place back in 350 degree oven with topping for about 10 minutes.

Homemade Granola

Description:

Great as a yogurt topper, as a small bowl of cereal or just a crunchy low b6 snack.

Cuisine: American

Dish Type: Main

Primary Ingredient: Oats

Ingredients:

3 c. old fashioned oats (no instant)
½ -1 tsp cinnamon
¼ tsp salt
¼ c extra virgin olive oil (or other oil)
1/3 c. honey
1 tsp vanilla extract

Instructions:

Mix together dry ingredients in a raised baking sheet.
In a separate bowl mix the honey, oil, and vanilla.
Pour wet ingredients over dry and mix well.
Bake at 300 degrees for 15 minutes. Stir and continue baking another 15 minutes.
Flakes should be golden brown. If needed bake another 5-10 minutes.
Remove from oven and let cool. Once cooled, remove from pan and place in airtight container. Can be stored in pantry or fridge.
Yields slightly more than 3 cups.
(since this is such a small amount, it can be prepared in the toaster oven, saving the need to turn on big oven)
